When I pick mangos, I make sure they're not too firm, I like mine more soft, but not bruised. The ones I usually get are about half green half a red -type color, and they're great.
I cut them like a peach, stand it up, cut down 4 sides and make it a rectangle-type shape, and then just keep cutting in as many places as you can until you're too close to the seed to cut, then eat what's left till you're at the seed. LOL ::Shrugs:: That's what I do.
