I tried a new cookie recipe I ran across over the holiday weekend. There are many variations you could do with them. Give it a try and put your spin on it. I call them 'Stuff in a Cookie..Cookie'... also called "Compost Cookies'. Don't be afraid to use the coffee grounds.. the not so secret (now) ingredient!
You could do all kinds of variations. The coffee grounds I dried out using the microwave. The dough is pretty sticky, so parchment paper on the cookie sheet for baking it s huge plus for evenly brown bottoms on the cookies and no sticking to the pan.
Creamables
1 1/2 sticks butter
3/4 cup dark brown sugar 1 cup of regular brown sugar (what I had) 1/4 cup white sugar 1 cup 2 tablespoons dry, used coffee grounds (dried in microwave) Wet Ingredients
1 egg 2 eggs 1 tablespoon vanilla 2 tablespoons 2 tablespoons of Vanilla Cinnamon coffee creamer Dry Ingredients
1 cup oatmeal
1 cup flour 2 cups 3/4 cup roughly crushed potato chips 1 cup 1/2 cup roughly crushed pretzels ¾ to 1cup 1/2 cup roughly crushed Fritos 3/4- to 1 cup of Cocoa Chex Mix 1/2 cup butterscotch chips 1 cup 1/2 cup chocolate chips 1 cup (My honey Ted thought they needed a bit more chocolate chips, the last batch I added some mini chocolate chips. ) 1 teaspoon baking soda ½ teaspoon baking soda and ½ teaspoon of baking powder
The person that submitted this recipe mentioned their cookies were flat. They should have put the dough in the refrigerator for a while. I had the dough in the frig for about 6ish hours. You can also make it the night before and let it stay in the frig overnight. This seemed to give the cookies a lift. Also the baking powder may have helped with that too! Make sure you have parchment paper lining your cookie sheets. It’s pretty sticky dough.
Directions:
1. Preheat oven to 350º.
2. In your Kitchen Aid or a large mixing bowl, cream together the creamables.
3. In a small bowl, combine the wet ingredients and whisk together until smooth.
4. Add the combined wet ingredients to the creamables. Mix together until well incorporated.
5. In a large mixing bowl, add the dry ingredients. Using a spatula, fold together until evenly distributed.
6. Slowly add the dry ingredients to the combined creamables and wet ingredients. Mix until evenly combined. (*Optional: Chill dough for 2 hrs or overnight. I suggest doing this!)
7. Shape dough into balls–about 2 tablespoons each.
8. Place dough balls about 2 inches apart on Silpat- or parchment paper-lined cookie sheets.9. Bake at 350º for 10-12 minutes or until golden brown. Remove the cookie sheets from the oven and let stand for 2 minutes. Then place cookies on wire racks to cool.

I decided to modify the French Toast recipe a bit. Skip the peaches and make the classic Cranberry Sauce. It sounded yummy, and since the holidays are approaching, it works! You'll see the photo of the meal has how much time it takes to prep/cook and total time it takes for the entire meal. Once I start cooking CPI will give me step by step directions on what to do, so the whole meal is done at the same time. Breakfast for Dinner will be warm and yummy. I'll let you know how it goes.

Anyone else do 'Car Karaoke' to get through traffic jams? If not, you should start. It really does relieve the tension of being stuck in traffic. If you sing off key, better yet!

He's been travelling sharing his scary and uber talented talents.

Ted and I tried out WWW.COOKINGPLANIT.COM for the first time. I was turned on to this site by my co-worker Jordan. Since I enjoy cooking, I checked it out and then set myself up with a 'FREE' account. By having an account, the meals I choose will be saved, grocery lists created, and everything broken up step by step to cook the meal so each dish will be done at the same time to serve and eat. I'm not very good with time management in my kitchen, and organization could be better. Cooking Plan It. com takes care of all of that.
For my first meal, I picked Grandma Rose's Spaghetti and Meatballs w/ Tomato Sauce and Cinnamon Twists! Cooking Plan It.com walked me through the recipes, created easy to read grocery lists, how to prep for the cooking so putting things together is easier. When you are ready to rock, you just hit the start to cook button and you will get step by step what to do for each dish. These simple instructions make it possible to create a yummy meal that will be finished the same time to serve and eat! Check out the video! This will show you what to expect!
