Stuff in a Cookie.. cookie's secret ingredient??...

I tried a new cookie recipe I ran across over the holiday weekend.  There are many variations you could do with them. Give it a try and put your spin on it.  I call them 'Stuff in a Cookie..Cookie'... also called "Compost Cookies'.  Don't be afraid to use the coffee grounds.. the not so secret (now) ingredient!

You could do all kinds of variations. The coffee grounds I dried out using the microwave. The dough is pretty sticky, so parchment paper on the cookie sheet for baking it s huge plus for evenly brown bottoms on the cookies and no sticking to the pan.
I put in red  the tweaks I did. smiley
 
Copycat Momofuku Compost Cookies (Adapted from Oatmeal CookieBlog)

Creamables
1 1/2 sticks butter
3/4 cup dark brown sugar 
1 cup of regular brown sugar (what I had)
1/4 cup white sugar   1 cup
2 tablespoons dry, used coffee grounds (dried in microwave)
Wet Ingredients
1 egg  
2 eggs
1 tablespoon vanilla  2 tablespoons
2 tablespoons of Vanilla Cinnamon coffee creamer
Dry Ingredients
1 cup oatmeal
1 cup flour  
2 cups
3/4 cup roughly crushed potato chips 1 cup
1/2 cup roughly crushed pretzels ¾ to 1cup
1/2 cup roughly crushed Fritos  3/4- to 1 cup of Cocoa Chex Mix
1/2 cup butterscotch chips 1 cup
1/2 cup chocolate chips 1 cup (My honey Ted thought they needed a bit more chocolate chips, the last batch I added some mini chocolate chips. )
1 teaspoon baking soda  ½ teaspoon baking soda and ½ teaspoon of baking powder

The person that submitted this recipe mentioned their cookies were flat. They should have put the dough in the refrigerator for a while.   I had the dough in the frig for about 6ish hours.  You can also make it the night before and let it stay in the frig overnight.  This seemed to give the cookies a lift. Also the baking powder may have helped with that too!  Make sure you have parchment paper lining your cookie sheets. It’s pretty sticky dough.

Directions:
1. Preheat oven to 350º.
2. In your Kitchen Aid or a large mixing bowl, cream together the creamables.
3. In a small bowl, combine the wet ingredients and whisk together until smooth.
4. Add the combined wet ingredients to the creamables. Mix together until well incorporated.
5. In a large mixing bowl, add the dry ingredients. Using a spatula, fold together until evenly distributed.
6. Slowly add the dry ingredients to the combined creamables and wet ingredients. Mix until evenly combined. (*Optional: Chill dough for 2 hrs or overnight. I suggest doing this!)
7. Shape dough into balls–about 2 tablespoons each.
8. Place dough balls about 2 inches apart on Silpat- or parchment paper-lined cookie sheets.9. Bake at 350º for 10-12 minutes or until golden brown. Remove the cookie sheets from the oven and let stand for 2 minutes. Then place cookies on wire racks to cool.
